lightly pickled celery
I used to dislike celery, but ever since my friend brought pickled celery to a home party, I’ve been obsessed. I now add it to soup, pasta, everything.

String celery and slice thinly on a diagonal.

Place in a Ziploc or container, sprinkle with salt (and a touch of red chili if you like). Mix lightly.

Leave for 5–6 hours (recommend putting a weight on top).
